Mathi Varuthathu !! (Spicy Sardine fry)

If you ask which is the most consumed fish in Kerala,there is one sudden answer:Sardine.These are consumed  by rich and poor alike and during the seasons ,the fish markets get overflowed with it !! We cook it in so many different ways like prepare a coconut based curry,simmer with spices,fry with different marinades,cook dry with coconut and spices etc.For me the most nostalgic is the one my Mamma prepares with that chembu simmered in a coconut base.Ha,the pure smell of coconut oil and the tempering effect of shallots and curry leaves in it,no one can forget such a dish.This one is my version of frying sardine keeping its real flavour and taste intact..

Ingredients

15 sardines
Coconut oil as required

Marinade

2 tsp kashmiri chilly powder
4 tbsp crushed black pepper
1/2 tsp turmeric powder
Salt

Method

Clean the sardines removing entrails and wash  well rubbing salt.
Make gashes on both sides.
Now prepare the marinade adding little water to make it a thick paste.Grinding all together is a better option.
Apply this marinade over and inside sardines.Marinate for at least one hour.
Heat coconut oil in a skillet and fry them till crisp in medium heat.(that’s entirely your taste.some don’t prefer crisps)
Serve hot with rice and curries.To me the combo of rice-kalan/theeyal-sardine is a feast in itself !!
