Vazhuthananga Chutney (Brinjal Chutney)


3 medium sized brinjal, cleaned and sliced thinly
2 medium tomatoes,cleaned and sliced thinly
1 medium onion,chopped finely
1 tsp chilly powder
1 tsp coriander powder
1 tsp sambar powder
salt and oil (preferable coconut oil) as required


  1. Heat oil in a small skillet and sauté chopped onion till it turn pink.Add all the powders to it and again sauté well till the raw smell disappears.
  2. Add tomatoes and brinjal pieces and mix well for 4-5 minutes.The pieces should be well coated with masala.Add salt and switch off the stove.Allow the mixture to Cool.
  3. Now blend it till smooth without adding water.
  4. Heat some oil again in skillet and pour the chutney to this.Mix well for 2 minutes.
