Ulli Curry (ഉള്ളിക്കറി) / Shallots Curry !!

30-35 whole shallots peeled
1 green chilly slitted lengthwise
pinch of turmeric powder
salt as needed
4-5 tbsp tamarind juice (depends on sourness)
1 small piece jaggery
1/4 cup water

To Roast & Grind

Half cup grated coconut
pinch of fennel seeds
1 tsp chilly powder
1.5 tsp coriander powder

1/4 cup water

To temper

2 tsp coconut oil
1/2 tsp mustard seeds
1 sprig curry leaf

  • Fry coconut and fennel seeds in a small frying pan till brown.Reduce the flame and add the powders. Sauté till the raw smell goes.Allow to cool and grind it adding water, little by little. The paste should be smooth.
  • Pressure cook the shallots adding green chilly, turmeric powder, salt and water till one whistle. The shallots should be cooked, yet intact in shape. So don’t overcook.
  • Now boil it without lid and add tamarind juice.Drop the jaggery piece and check salt.Balace the taste.
  • After 2 minutes pour the roasted coconut mixture into the curry and bring it to a boil.Reduce the flame and cook till the oil gathers over the top.
  • Heat oil in a small skillet and splutter mustard seeds.Add the curry leaves and pour it over the curry.

I think the sweetness of the shallots will give a nice flavor to the curry and will come in handy when you are out of fresh veggies..
