So,this is my first entry to the awesome event called Indian Cooking Challenge
.To me,this is an excellent time to experiment and taste various dishes from around India.I thank Srivalli for giving me the opportunity to take part in the event and patiently replying all my last minute queries.
This month we are here with Iyengar Bakery Khara Biscuits,a speciality from Karnataka.The simple and elegant Biscuit recipe source is Champa of Versatile Vegetarian Kitchen.
Her recipe was perfect for me except the addition of some more yogurt to the dough.We all loved the biscuits so much that even my little one,who is not that savory friendly gone crazy for it…Here comes the recipe:
2 cup/250 gm all purpose flour/maida
1/3 cup butter,softened
4 tsp sugar
pinch of salt
3 green chillies,chopped (you may use more according to the tolerance level)
handful of cilantro/coriander leaves,chopped
5-6 tbsp yogurt (this depends on your flour while kneading)
1 tbsp sesame seeds (optional)
Preheat the oven to 160 C.Line two baking sheets either with aluminium foil or parchment paper.You may grease it with vegetable oil spray.In a bowl sift the flour and salt together.In another bowl,beat the butter and sugar till creamy and soft.Add yoghurt l to this and continue beating with a whisker or spoon.The yoghurt part you should be careful.You don’t have to add complete.Use half mentioned in the ingredient section.Since the flour you are using may not need that much of yoghurt.When you knead,you may use the left over.Now slowly mix in the dry ingredients using your hand.You have to make a crumbly dough,not so wet to say(Mine was bit difficult.The reason why I added more yoghurt).You don’t have to give much pressure with hands.
Now Roll the douugh like this.You can use your hands even in this.It’s quiet easy.

And now it’s baking time.Bake for 18-20 minutes.This too depends on your oven power.I had to bake for 25 minutes.Now,one thing you may have to remember is never judge the cookies just after baking.They may be still soft and the colour may not have changed.As Champa puts it,we are not using much sugar and any rising agent for these Indian cookies.And don’t forget the fact that,after removing from oven,everything is tend to cook it’s own for some more time.So adjust like that.When cooled,transfer them to an airtight container.It stays fresh for 4 days..Wish you good luck if you can keep the tempting cookies till that time..hehe..Enjoy with hot coffee/tea!
