Cauliflower Kootu !

Cauliflower is the favourite of many.Having a unique flavour of it’s own,this vegetable is low in fat ,low in carbs,yet high in fibre and vitamin C. I love cauliflower and always experiment it with various combos.This one is a simple, nutrition-packed recipe.Try out as a side dish for Rice,Chapathi or Roti.



Ingredients

1 medium sized cauliflower,cleaned,washed and cut into 3/4 inch pieces
1/2 cup green gram dal/cherupayar parippu
1 bay leaf
1/2 tsp turmeric powder
2 sprig curry leaves
salt,oil,water as required

To grind

1 cup grated coconut
1 tsp cumin seeds
2-3 green chillies (depends on your tolerance level)


To temper

1/2 tsp mustard seeds
2 red chillies

Method

Pressure cook the green gram dal adding pinch of turmeric powder and 1/4 cup water.2 -3 whistles will do.Let it release the pressure .Keep it aside.In a pot,cook the chopped cauliflower adding turmeric powder,bay leaf and 1/2 cup water.Add salt when half-done.Reduce the heat and add the cooked dal to this.Let it simmer.Meanwhile grind the grated coconut,green chillies and cumin seeds to a fine paste adding little water.Now pour this paste to the cauliflower-dal mixture.Check salt and simmer for another 5 minutes.Now switch off the stove and  add curry leaves.Heat oil in a small skillet and splutter mustard seeds and dry chillies.Pour it over the kootu.Serve with Rice/Chapathi/Roti.
