Ingredients
1/4 cup Basmati rice
3.5 cup full cream milk
10-15 almonds,blanched and ground to a paste with milk
1/3 cup sugar
1/2 tsp cardamom powder
4 almonds, shredded
5 green pistachios,peeled and sliced
drop of kewra essence
few rose petals and pistachio slices to garnish
Method
Wash and soak the basmati rice for at least one hour.Grind to fine paste adding little water.Mix this rice paste with half cup milk.Mix well to make it thin.In a heavy bottomed pan slowly mix in the remaining three cups of milk to rice paste and start cooking in medium heat stirring continuously.This process is very important.Reduce the heat to law medium and stir till the rice paste turns cream and thick.The paste should be cooked well.This may take 5-7 minutes.Add sugar and cardamom powder at this stage and cook till the sugar dissolve.Boil till thick and remove from fire.Add kewra essence, shredded almonds and pistachios.Pour the creamy phirni to individual clay bowls and allow to chill.Garnish with rose petals and pistachios.
*you may add pinch of saffron for a nice colour and flavor.
