Chettinad Egg Masala !

This recipe is one of my favorites from Chettinad.Simple and subtly spiced,you may find it unique with a tamarind base.I prefer to serve this with appam or chapathi..Perfect winner !

6 eggs,hard-boiled & peeled whole
2 medium onions,chopped finely
1 large tomato,chopped finely
2 garlic cloves,chopped
1/4 cup coriander leaves,chopped
1/4 tsp turmeric powder
1 tsp kashmiri chilly powder
1/4 tsp cumin powder
1/2 tsp black pepper & cumin powder (grind both pepper and cumin together to prepare.This is a chettinad special spice powder)
1/4 tsp tamarind paste
1/4 to 1/2 cup water
salt as required
For tempering
2 tsp oil
1/4 tsp fennel seeds
1/2 tsp urad dal
2 sprig curry leaves
Heat oil in a medium skillet and splutter the fennel ,urad dal and curry leaves.Add the chopped tomatoes and roast till light brown.Add garlic and continue roasting for one more minute.Now add the chopped tomatoes and chopped coriander to this and mix thoroughly.Cook till everything is blended well.Mix in the turmeric powder and roast.Once the mixture is cooked well,add the chilli,cumin and black pepper-cumin powders to this along with tamarind paste.Add little water and roast till the raw smell disappears.Add salt and pour in 1/4 cup water.Bring this to boil and cook covered in medium heat till the gravy thickens.Make few slits on the eggs and add place it over the gravy.Spoon gravy over them.Keep it closed for another one minute and switch off.Serve with appam or chapathi.
