Kozhi Olathu | Chicken Dry Fry !

This is a wonderful chicken recipe which I was thoroughly impressed while reading itself.Naushad,one of my favorite chefs from Kerala is obviously a hit with tastes.His recipes are simple,but magical.Inspired with his wonderful collection of exotic recipes, hope I can bring more of his recipes here.This of course is an amended version, personalized according to my taste. If you are in search of an easy but tasty recipe of chicken,go for this..Cheers !

Ingredients

1 kg chicken cut into small pieces,preferably boneless
1 inch piece ginger,crushed
6-8 garlic cloves,crushed
1/2 cup shallots,sliced
2 green chillies,slitted
1 medium sized onion,chopped
1/4 cup coconut pieces,chopped
1/2 tsp mustard seeds
2 sprig curry leaves
2 tsp kashmiri chilly powder
1 tbsp coriander powder
1/2 tsp turmeric powder
1 tbsp crushed black pepper
4-5 tbsp oil,preferably coconut oil
salt,as needed

Method

Heat oil in a heavy bottomed pan and splutter mustard seeds.Reduce the heat and drop the crushed ginger,garlic and chillies. Saute for one minute till the green chilly start changing colour.Add the chopped shallots and onion to this and roast till light brown.Add the chopped coconut pieces and curry leaves and roast for two more minutes.Now add the spice powders mentioned and mix well till the raw smell vanishes.Drop the cleaned chicken pieces and salt to this and mix well to wrap the masala.Cook the chicken with a lid in law flame.This will bring the liquid from the chicken which is enough to cook it.Once chicken pieces get cooked,increase the flame to dry the water.Once it start to thicken,reduce the heat to minimum and add little more oil.Roast in the open pan till it’s dry and coated with masala.Check the seasoning and serve hot with rice,appam,bread or even roti !

    Anil,I guess it will.But my suggestion is to add garam masala.If possible the real pieces.Since buffalo is heavy and the meat is less absorbing compared to chicken,spices can take it to the mark.

    The sharbat reminded me of my childhood days when we were in KOTA (Rajasthan)…Its very famous there 🙂
