Of Flavours & Tastes…
Nothing special about the recipe today I am going to present. But nostalgic for sure. The morning pranks of a day-scholar coupled with the fast breakfast routine ! I guess many of you have had similar experience. Upma was one of such breakfasts, easy to have either with pappadam (Indian wafers) or cherupazham (small bananas).Today with a cup of hot steaming tea,the ever cherishing upma brings back lots of memories…Here is the simple recipe.
1 cup rava / semolina
1 small onion sliced or handful of shallots sliced
*1/4 cups each of carrot,beans,chopped
2 tbsp oil
1/4 tsp mustard seeds
1/4 tsp urad dal
1/4 tsp chana dal / kadalapparippu
1 sprig curry leaves
1 small piece ginger,crushed
2 green chillies,slitted lengthwise
2 1/4 cup water
salt as required
*You may add vegetables of your choice and flavor
Roast rava in low flame till it’s warm.Keep it ready.Steam or boil the chopped vegetables and keep ready as well.Heat oil in a kadai and splutter the mustard seeds, urad dal and chana dal.Reduce the heat and add the curry leaves followed by green chillies and ginger.Saute it for one minute and add the sliced onion and roast till light brown. Now drop the cooked veggies and saute till everything is mixed well.Pour the water and add salt.Bring the water to a boil. When it’s still boiling slowly sprinkle the rava over the kadai.Once you sprinkle rava, the mixture will suddenly start to thicken up.Now reduce the heat to minimum and give a stir.Close with the lid and cook for 2-3 minutes.Open the lid and stir once again.Check the water level. If you feel it’s mushy cook for little more time without lid.Serve hot with wafers or banana and hot tea !
