Paneer Biryani | Easy Lunchbox Idea !

Paneer Biryani is a simple Biryani version without the usual complex procedures of making. In fact this is made in a pressure cooker and you can guess the simplicity of the dish.Since we love paneer here,it’s naturally my first choice for lunchbox. This humble Biryani calls for no colour and  tastes much homely.

1.5 cups Basmati Rice
300 gm Paneer, cubed & dipped in hot water
2 ” cinnamon
3 cloves
4 cardamoms
2 medium sized onion,sliced
4-5 green chillies,slitted lengthwise
2 tsp ginger-garlic paste
1 large tomato,chopped
Small bundle of mint leaves,chopped
3 cups water
2 tbsp oil / ghee
salt as required

Heat oil / ghee in a pressure cooker and add the cardamom, cinnamon and cloves.Reduce the heat and add the sliced onions followed by green chillies. Increase the flame and roast for 2 minutes.Add ginger- garlic paste and roast till the raw smell vanishes. Now to this add the chopped tomatoes and mint leaves.Mix and roast till everything is blended well.Pick the paneer cubes from hot water to drop in pressure cooker,to the cooking masala.Add the washed basmati rice now.Mix well till all the ingredients are properly blend and rice turns soft.Add three cups of water to this along with salt.Close the cooker with the lid.Once the first whistle blows, switch off the stove and keep it idle till the pressure release in itself.Open the cooker and mix the Biriyani.Check the salt and serve hot with raita and pappadam.Or pack in lunch box along with curd and pickle..Enjoy !

*Adding Colour is perfectly your choice.
