Thalassery Biryani | A Unique Biryani from Malabar !

I am absolutely delighted to post this recipe,the one I always wanted to try out.This Malabar special Biryani is unique and special in many ways.The USP being the marinade in which then chicken is slowly cooked and layered with rice and spices.I am hugely satisfied with the result and turned ‘deewana’ ever since.Here is the recipe for this flamboyant Biryani.Try at least once,all my Biryani lovers out there…


1 kg kaima rice / basmati Rice
2 kg chicken,cut into medium pieces
100 gm dalda
25 gm ghee
3 large onions,sliced
1.5 tsp garam masala

To Marinate Chicken

75 gm cashewnuts,ground finely
75 gm white raisins,ground finely
50 gm white sesame seeds,ground finely
2 tbsp ginger paste
2 tbsp garlic paste
6 green chillies, ground
salt,as required
1 cup curd
3 tsp pepper powder

To Cook Rice

2.5 liter water
2 cardamoms
2 cloves
2 star anise
2 maces
salt as required

To Garnish

1 large onion, sliced thin
25 gm cashews
20 gm raisins
1 small bunch mint leaves,chopped
1 large bunch coriander leaves,chopped
1/4 cup milk
pinch of yellow color (optional)


In a large bowl marinate the cleaned chicken pieces in the spices and ingredients mentioned in the particular section.Keep this marinated for one hour.Meanwhile heat dalda /ghee in a frying pan and deep fry the sliced onion,cashews and raisins respectively.Keep them ready fro garnish.In another large vessel heat 50 gm dalda and pour 2.5 liters of water.Drop the spices mentioned in the section and add salt.Bring this to a boil and add the washed rice .Cook the rice in high medium flame and let the water to completely dry.It’s better to switch off the flame once the water is almost absorbed .Close with the lid and keep it ready for dum/layering.This way the rice will be 3/4 cooked.Now heat ghee in another thick bottomed large vessel and roast the sliced onion till brown.To this add the marinated chicken.Sprinkle the garam masala powder and cook the chicken with a lid in low medium heat.Stir in between and cook till the gravy thickens and masala is well wrapped with chicken.Switch off and start layering.If you are adding color to the Biryani,add pinch of lemon color to 1/4 cup milk and keep ready.The layering can be done in a thick bottomed vessel.First, layer the chicken masala followed by the rice.Sprinkle the color mixture,fried onion,cashews,raisins,chopped coriander and mint leaves.Proceed with the chicken,rice and garnish layers.The top layer should always be the rice with garnish.Close with a tight lid and cook in minimum heat for another 5-7 minutes.While doing this keep something heavy over the lid so that the Biryani will be rightly cooked in the steam thus produced.Traditionally it’s done with charcoal.Serve hot with Kachember /curd,pappadam and pickle.
