Mutton Varattiyathu | Roasted Mutton

A very simple,typical Kerala village style preparation.Mutton being a versatile meat,the transition to a grand side-dish comes handy.Something even a newbie in cooking can master !

Ingredients

500gm mutton,chopped into curry pieces
1″ ginger ,crushed
6-8 garlic,crushed
1 cup shallots,sliced
2 sprig curry leaves
1 tsp turmeric powder
3 tbsp kashmiri chilli powder
1 tsp garam masala
salt,as required

To Roast

3-4 tbsp oil, preferably coconut oil
1 tbsp crushed ginger
3-4 garlic cloves,crushed
1 tbsp kashmiri chilli powder
handful of curry leaves

Method

Shift the cleaned mutton to a pressure cooker.Add all the ingredients mentioned in the first section and mix well with your hand.Add 1/4 cup water and close with the lid.Let it remain for 15 minutes before cooking.Cook in high flame till the first whistle.Now reduce to the minimum and cook for 10-12 minutes.Be careful not to overcook the mutton.Switch off and keep.There will still be liquid in the mutton.Heat a heavy bottomed pan and pour the oil.Add crushed ginger,garlic and curry leaves to this and roast till the raw smell withdraws.Reduce the heat and add the kashmiri chilly powder.Mix well and add the cooked mutton along with the liquid to this.Mix well and increase the heat.Once it start boiling,reduce the heat to minimum and roast till the masala make a glazing coat over mutton.Check salt and enjoy with chapathi/rice/appam/bread etc !
