Savala Thoran | Onion Stir Fry

I don’t have anything to boast about this simple onion fry.Roasted with coconut and chillies,it’s one among the simple side dishes one can prepare for rice. And yes, this makes an easy lunchbox subject.

Ingredients

2 medium sized onions,chopped finely
3-4 tsp grated coconut
1 large green chilly,chopped
salt,as required
1 tsp oil, preferably coconut oil
1/2 tsp mustard seeds
1 sprig curry leaves

Method

Bring together chopped onion, grated coconut and chopped chillies in a bowl.Add salt to this and mix well with your hand.Keep it ready. In a small pan heat oil and splutter mustard seeds and curry leaves.Reduce the heat and add the onion mixture to this.Mix well and bring everything to centre to make a heap.Close with the lid and cook in lowest flame. After two minutes you may open and stir your thoran. The color will be light brown by now.Once more bring it to centre and keep closed.Cook for another two minutes.Open and check the seasoning.Switch off and serve with rice.
