Ingredients (yields 12-16 muffins)
275 gm plain flour,sifted
200 gm caster sugar
2 tsp baking powder
1 tbsp ground ginger
1 tsp salt
150 ml vegetable oil
300 gm pears,peeled,cored and diced (half inch)
Preheat the oven to 180 degree.Prepare the muffin tray with paper cases.
Bring all the ingredients except the diced pears to a large bowl and mix well with a whisker / spatula till blended well and smooth.Fold in the diced pears and fill the cases until 3/4 th. Bake 20 minutes or till the edges turn golden and muffins turn springy on touch.Cool them on a wire rack and serve !
