Cinnamon Yoghurt Cake

There are times you crave for something subtly sweet .I guess everyone will have some ‘saver’ recipe to hurdle such emergencies.Fast baking to make yourself happy and content.I often bounce upon such easy bakes.Here is one from my Rachel Allen collection.A real fast and not-at-all-guilty pick..Love you Rachel,for combining the ever-exotic cinnamon with the tang of yoghurt…

Ingredients

225 gm self-raising flour
1 tsp baking powder
1 tbsp cinnamon powder
75 gm almonds,ground
100 gm caster sugar
2 eggs
50 gm honey
250 ml natural yoghurt / curd
150 ml vegetable oil/sunflower oil

To decorate

1 tbsp icing sugar
1/2 tsp cinnamon powder

And,
you need a 23 cm (9in) cake tin

Method

Preheat the oven to 180 degree and prepare the cake tin-greasing with vegetable oil and lining the base.Seive the flour ,baking powder and cinnamon into a large bowl .Add ground almonds and sugar to this and mix everything well.In another bowl prepare the wet ingredients.Whisk together the eggs,honey,yogurt and vegetable oil.Add this to dry ingredients and fold in well to combine.Now shift the batter  into the prepared tin and bake till 25-30 minutes or golden on top and a cake tester comes out clean.Remove from the oven once done and allow to cool.Loosen the edges with a knife and shift to the serving plate.Dust the mixture of cinnamon powder and icing sugar over the cake.

    I really love adding yogurt in cake batter, it magically makes the cake soft and with perfect crumbs. This sounds like a very yummy cake. Perfect for tea time snacking !!
