Of Flavours & Tastes…

Ottada | My Onam Wishes to All

Here I am wishing all my readers and visitors a very happy and prosperous Onam….!
Ottada is one Onam specialty in central Kerala. To be more clear, the ottada just sprinkled with grated coconut and not sweetened or flavoured is offered to Mahabali.I love the charred aroma emanating from the banana parcels.Indeed a delight to have.Apart from Onam celebrations, the filling in such parcels keep changing. It can be a grated coconut-sugar-cardamom mixture or a jaggery-coconut filling.Don’t know but why Mahabali loves the plain ones !
Ingredients
yield 4 medium-sized ottadas
2 heaped cup of roasted rice flour
1-1 1/4 cup water (approx.depends on flour)
salt as required
grated coconut,as required
need 4 rectangular shaped banana leaves
& a clay pan (man chatty)

Method
Bring together rice flour and salt in a mixing bowl and slowly wet it with water. The consistency should be of a thick batter.Flatten one portion of the batter in banana leaf and sprinkle grated coconut. You may even add sugar and cardamom powder to enhance the flavor.Fold it and shift to a clay pan and cook both sides in low heat till the banana leaves turn brown and crispy.By this time you can see the charred marks over ada.
