Kanava Varattiyathu | Kerala Style Squid Roast

Another Kerala style seafood delicacy. For all seafood lovers out there.Goes well with Chapathi and Rice!

To Cook Squid

500 gm squid, cleaned and cut into rings
1’ginger crushed
5 shallots ,sliced
1 green chilly,slitted
3 garlic cloves,sliced
2 pieces of cocum, soaked in water
2 sprig curry leaves
1/4 tsp turmeric powder
1 tsp kashmiri chilly powder (or 1/2 tsp chilly powder)
1 tbsp coriander powder
1/2 tsp pepper powder
salt as required

To roast

3 -5 tsp coconut oil
1 large onion,sliced
1/2 tsp garam masala
1 sprig curry leaf

*1/2 tsp lime juice to sprinkle

Bring all the ingredients mentioned in cooking section to a curry pot (preferably clay pot) and cook in medium flame stirring every now and then without adding water.Once hot, cook in low flame .The squid will start releasing water immediately and entire cooking can be done in this.Don’t overcook the squid ,it may turn rubbery.5-7 minutes will be enough.Switch off once done and keep ready. In another pan heat coconut oil and roast the sliced onions and curry leaves till light brown.Add garam masala and roast stirring.Add the squid along with water if any.Cook in medium heat till roasted well and masala coats well over the squid.Switch off and sprinkle the lime juice.Serve hot with chapathi, appam or rice !
