Being the lover of lady finger,I wonder why so far didn’t post this one.Very simple Kerala style Mezhukkupuratti (coated with oil),this one makes the meal homely.
500 gm lady finger,washed,wiped and sliced
4-5 green chillies,slitted
1 sprig curry leaf
salt,oil as required
Heat oil in a frying pan and splutter curry leaves.Reduce the heat and add the lady finger and green chillies.Mix thoroughly and cook without lid in low flame.Once the lady finger turn soft and sticky,saute well with a spoon every now and then.Slowly the lady finger changes it’s colour and get rid of stickiness.Add salt at this stage and fry again.Roast till lady finger go completely dry and crispy.Serve with rice.
