Cauliflower- Mutta | Egg Thoran


2 cups cauliflower florets
5 egg whites,beaten
2 tsp oil
1/4 tsp mustard seeds
few curry leaves

To crush

1/4 to 1/2 cup grated coconut (it’s what you need)
3 shallots
2 green chillies
2-3 curry leaves,
1/4 tsp turmeric powder
salt,as required


Drop the cauliflower florets in salted water for at least half an hour to get rid of insects if any.Wash them in running water and strain.Crush the florets either in a grinder or food processor.You may as well chop finely.Heat oil in a pan and splutter mustard seeds and curry leaves.Drop the crushed/chopped cauliflower to this and mix thoroughly.Close with the lid and cook in low flame for 3 minutes.Meanwhile crush the coconut and other ingredients mentioned in the section and keep ready.Open the lid and mix again with a spoon.Add the crushed coconut to this and stir well.Close again with the lid and cook in the steam for 4-5 minutes.By this time the raw smell of masala should disappear and a nice aroma escape from thoran.Now slowly add the beaten egg stirring constantly to mix the same with cauliflower. Increase the heat and mix thoran well.Check the seasoning and switch off.Serve with rice.

* Though I confined with egg whites,you may go ahead to use whole egg.This will increase the flavor by and large.

    My daughter likes eggs but not cauliflower but if I do this thoran, I think she would love it, yumm..
