Pacha Theeyal

1 cup shallots,sliced
1/2 cup achinga / long beans,chopped into 1” pieces
1 cup elephant yam/chena,chopped
1 cup brinjal,preferably white,chopped
2 green chillies,sliced
1/2 tsp turmeric powder
salt,as required
2 cups water
1.5 tsp tamarind paste or 1/4 cup tamarind syrup

To grind

1 heaped cup grated coconut
1 tsp chilly powder
2 tsp coriander powder
3/4 to 1 cup water

To temper

2 tsp coconut oil
1/2 tsp mustard seeds
1 dried chilly,cut into two
2 sprig curry leaves

In a wide curry pot bring together the chopped vegetables along with turmeric powder, green chillies, salt and water.Once boiled reduce the heat to medium and cook.Meanwhile grind the coconut along with water and spice powders mentioned into a fine paste.Add water as required while grinding.Once the vegetables are cooked, add the tamarind paste and mix well.Bring this to a boil and pour the ground coconut paste and water if necessary.Cook the curry in high medium till oil clears on top and the consistency comes to medium.Check salt and add if required.Switch off and heat oil in a small frying pan.Splutter mustard, chilly and curry leaves.Pour this over the curry.Enjoy with rice or dosa/Idli.

*As opposed to regular theeyal, here coconut and spices are not roasted, thus bringing name ‘pacha'(raw) theeyal.
