Unakkachemmeen-Chakkakkuru-Manga Curry

1.5 cup jackfruit seeds/chakkakkuru,peeled and sliced into two
half of sour raw mango,chopped
25 gm cleaned dry shrimp/unakkachemmeen
2 cup water
1/4 tsp turmeric powder
1 tsp coriander powder
2.5 tsp kashmiri chilly powder (reduce to 1 tsp if you go for regular chilly powder)
1 cup grated coconut, ground into fine paste adding 1/2 to 3/4 cup water
salt,as needed

To Temper

2 tsp coconut oil
4 shallots,chopped
2 sprig curry leaves

In a curry pot, bring together sliced jackfruit seeds, turmeric powder, chilly powder, coriander powder and salt.Pour 2 cups of water to this and cook in high flame till boil.Reduce heat  and cook in medium flame till jackfruit seeds are cooked and not mushy. At this stage add chopped raw mango, crushed ginger and increase heat.Cook this for two minutes and add the ground coconut mixture.Wash the grinder with some water and pour this as well.By the time this mixture boils, roast the dry shrimp till light red.Wash this in a colander and crush in the small jar of a grinder.Add this to the simmering curry and cook till everything is blended well. This may take 4-5 minutes. The curry should be semi-thick.Check salt and switch off.In another small skillet, heat coconut oil and roast the shallots till crispy and light brown.Add curry leaves and pour this over curry and keep closed for sometime.Enjoy with rice.

*Be careful with mango.Add considering the sourness.1/2 to 3/4 cup chopped mangoes will do if it’s sour enough.
