Mutton Chops

500gm mutton,cleaned and chopped medium
2 medium sized onion,chopped
2 medium tomatoes,pureed
1 small tomato, chopped
1′ ginger,chopped or crushed
7-8 garlic cloves,chopped
1/2 tsp turmeric powder
3 tsp kashmiri chilly powder
1/2 tsp garam masala
1/2 tsp fennel powder
1 cup water
2 sprig curry leaves
2 tsp oil (preferably coconut oil),
salt,as required

Heat oil in a pressure cooker and drop the chopped onion.Roast in medium flame till transparent and add ginger and garlic.Continue roasting till the raw smell disappears and the mixture turns brown. Now reduce the heat and add the turmeric, kashmiri chilly, garam masala powder, chopped tomatoes and curry leaves.Saute till the raw smell leaves and tomato pieces turn mushy.Add mutton and continue sauteing till the mutton turns brown.Add salt and tomato puree to this and roast till raw smell disappears and oil clears on top.Add water and close the cooker.Once the first whistle blows, reduce the heat and cook for another 15 minutes. The time varies according to how tender your mutton is.Usually 15 minutes goes well and your mutton won’t be over-cooked.Switch off and release the pressure.By this time gravy will be minimum and curry somewhat thick.Check whether the mutton is cooked well and still intact.Sprinkle the fennel powder and heat mutton chops for 1-2 minutes till everything is blended well.Serve hot with rice/pathiri/puttu/idiyappam/chapati etc.
